This morning Munchkin and I made a savory "Bagels-for-Breakfast Spread" for our Meatless Monday #MMAZ post.
Miso Spread on Sesame Bagel
The recipe is from the cookbook Vegan Planet, a gift I gave Kovas for Valentine's Day way back in 2003!
Ingredients:
Soft silken tofu, drained
1/2 cup tahini
1/4 cup miso paste (we used red, thus the brownish color of our spread)
1 tablespoon fresh squeezed lemon juice

In a food processor or blender, combine all ingredients until well blended. Transfer to a small bowl, cover, and refrigerate until ready to use, up to 3-5 days.
So simple and tasty - a delicious vegan alternative to cream cheese.
The flavor is less breakfast and more snack to me, maybe if you blended in some dried fruit?
