|Roasted butternut squash black bean burrito|
To prepare the roasted butternut squash, preheat oven to 400 degree. Peel, seed and cut into 1 inch cubes
1 medium butternut squash
1 red onion, diced
2 cloves of garlic, crushed
2 Tbs grapeseed oil
1 Tbs balsamic vinegar
salt and freshly ground black pepper
Place butternut squash mix on baking pan and cook 45 minutes or until fork tender, tossing after 30 minutes.
