These cookies are both vegan and paleo. Recipe adapted from The Girl Who Went Paleo Pumpkin Breakfast Cookies.
|Sunflower Buter Cookies|
Preheat oven to 350 degrees.
Combine until creamy:
1/2 cup canned pumpkin
1 cup sunflower butter (almond can also be used)
1/4 cup honey (omit for strict vegan)
2 tsp vanilla
In separate bowl combine:
2 cups almond meal flour
2 tsp ground cinnamon
1/2 tsp baking soda
1/2 cup hemp seeds
Combine wet and dry ingredients. Add
1 cup chopped walnuts
Bake for 10-15 minutes. Makes 16 large cookies.
