Preheat oven to 350 degrees. In large bowl combine:
1 cup old-fashioned oats
1 cup flour
1/3 cup raisins
1/4 cup unsweetened shredded coconut
1 Tbs Chia seeds (optional)
1/2 cup pecans
1 tsp baking powder
1 tsp ground cinnamon
1/4 tsp salt
few pinches of freshly ground nutmeg
Mix well. Add
1/2 cup unsweetened applesauce (or 1/2 cup ripe mashed banana)
2 Tbs honey
3 Tbs nondairy milk
1 Tbs grapeseed oil
Stir until well mixed. Take 1 1/2 Tbs mounds of batter and transfer to baking sheet. Bake for 16-18 minutes, let cool on pan and then transfer to cooling rack. Enjoy!
Great as a healthy snack or to pack in lunches and easy enough for the kids to make!

These sound great! I was just thinking how I want to make something for the kids for an upcoming road trip--this will be perfect!
ReplyDeleteYum! I need to make these! I wonder if I could use a different kind of oil instead of grapeseed (it's the only think I don't have, offhand).
ReplyDeleteAny mild/neutral oil would work - avocado, almond, canola.
