Meatless Monday - Sunflower Butter Cookies

These cookies are both vegan and paleo.  Recipe adapted from The Girl Who Went Paleo Pumpkin Breakfast Cookies.

Sunflower Buter Cookies
Preheat oven to 350 degrees.

Combine until creamy:
1/2 cup canned pumpkin 
1 cup sunflower butter (almond can also be used)
1/4 cup honey (omit for strict vegan)
2 tsp vanilla

In separate bowl combine:
2 cups almond meal flour
2 tsp ground cinnamon
1/2 tsp baking soda
1/2 cup hemp seeds

Combine wet and dry ingredients.  Add
1 cup chopped walnuts

Bake for 10-15 minutes.  Makes 16 large cookies.

World Water Day

World Water Day is held annually on March 22 as a means of focusing attention on the importance of freshwater and advocating for the sustainable management of freshwater resources.  In addition 2013 has been designated as the International Year of Water Cooperation.  Throughout the Year, the Water Cooperation 2013 campaign will be marked by a number of events, actions and initiatives to raise awareness of the potentials and challenges for water cooperation, facilitate dialogue among actors and promote innovative solutions for nurturing water cooperation.

Three Things Thursday

Last Thursday Kovas and I spent the afternoon tasting chianti at the Chianti Classico Grand Tasting - so much fun!  18 wineries were represented with a Classico, Reserva and some special bottlings each.  We had our favorites, but Kovas and I were amazed at how good all of them were!

After our tasting we headed over to the Purple Pig for dinner.  With the slogan "cheese, swine and wine," it was no surprise that I loved it!  We started off with some appetizers - Kovas tried several veggie appetizers, I tried a bone marrow dish.  I don't think I would have ordered this on my own, but one of Kovas' co-workers recommended it.  I'm glad I tried it because I really enjoyed it!  Entrees and desserts paired with tasty wines completed our evening. The Purple Pig has won the Michelin Guide Bib Gourmand winner from 2011-13, and it's clear to see why.  For a full recap of the dinner, check out Kovas' post on 50 States of Wine.

Meatless Monday - Zucchini Pancakes

Kovas really enjoys pancakes for meals other than breakfast, so this recipe for Zucchini Pancakes in Vegan Eats World (by Terry Hope Romero) caught his eye.  Prepared (and written by) Kovas - reposted from 50 States of Wine.

Vegan Eats World Zucchini Pancakes

Ingredients:

  • 1 1/2 lbs zucchini, grated
  • salt
  • 1 C fresh dill (I omitted this, as I'm not  a fan of dill)
  • 1/2 C chopped flat leaf parsley
  • 1 carrot, finely grated
  • 1 small onion, finely chopped
  • 3/4 unsweetened plain soy milk
  • 2 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 2/3 C unbleached flour
  • 1/4 C chickpea flour
  • 2 tsp cornstarch
  • 1 tsp baking powder
  • ground black pepper

Preparation:

  • Salt zucchini, let sit for 30 minutes, pour off excess water. Place zucchini into kitchen towel, wring out as much water as possible, return to mixing bowl.
  • Mix in parsley, carrot, onion, soymilk, olive oil, and lemon juice. Sift in flours, cornstarch, baking powder, salt and pepper, being careful not to over mix.
  • Fry in a pan using olive oil spray.

It's  that simple -- I finished off the pancakes in the oven, as I wanted to make sure they were cooked through. Excepting Munchkin, everyone in the family enjoyed them.

Exciting News about ZOOMA Chicago!

I'm happy to announce that I am a ZOOMA Ambassador again this year!  Although it was fun to head up to and run around beautiful Lake Geneva last year for the event, a little change this year -- it will be in Chicago!!

A half marathon and 10K start and finish in scenic Montrose Harbor, with views of the Chicago skyline. A scenic and flat course will give you a tour of the lakefront. After the finish line, there’s serious celebration with wine, massage, live music, shopping and fun at the lakefront park of Montrose Harbor, with access to the beach and swimming.

Meatless Monday - Chipotle Avocado Cream

Here's a great topping (slightly modified) from Let Them Eat Vegan, for any Mexican dish or dip for chips.

Using an immersion blender and tall cup or jar, puree:
1/2 cup water
1 cup (fairly packed) ripe avocado
1/3 cup raw cashews (soaked beforehand is preferable, but not essential)

Start on slow, then increase speed to high until very smooth and creamy.  Add additional water to thin, as desired.  Add:
1 1/2 to 2 Tbs freshly squeezed lemon or lime juice
1/2 tsp sea salt
1/4 tsp (or more) chipotle sauce (optional)

I used this first as a garnish for black bean soup, and the following day, my littlest finished if off with pita chips.  The combination of protein from the cashews and healthy fats from the avocados makes it a delicious and nutritious snack.

Three for Thursday

For my husband's birthday, we let him plan the weekend. We had some great family time including hiking at one of our local woods and visiting a nature center. To wrap up the 4 day weekend, we dropped the kiddos off at my aunt's, relished a quiet evening and then went into Chicago for lunch and some shopping.



We enjoyed some delicious Mexican fare and drinks at the Taco Joint.  Then stopped in Patagonia to bring in my (well worn) soft shell which had a seam come undone during the last washing.  This jacket was a favorite of mine, especially for spring skiing.  I was told it was not repairable and no longer being produced, but that was not a problem.  I was given a choice of similar styles and ultimately chose the Women's Tres 3-in-1 Jacket.  I love the quality of Patagonia products and even more so their exceptional customer service!



Not for our kiddos, but many school districts around the Chicagoland area had a snow day on Tuesday in anticipation of accumulation.  Our district held off and only cancelled after school activities.  They've had plenty of time to enjoy the snow - and no added school days at the end of the year:)

Meatless Monday - Wholesome Oat Snackles

These "snackles" are healthy enough for snack, but so delicious they can pass as a treat or dessert.  I love that they are low in added sweetener and oil - and that I had everything on hand to make the recipe!  Adapted from a recipe found in the Let Them Eat Vegan cookbook.



Preheat oven to 350 degrees.  In large bowl combine:

1 cup old-fashioned oats
1 cup flour
1/3 cup raisins
1/4 cup unsweetened shredded coconut
1 Tbs Chia seeds (optional)
1/2 cup pecans
1 tsp baking powder
1 tsp ground cinnamon
1/4 tsp salt
few pinches of freshly ground nutmeg

Mix well.  Add
1/2 cup unsweetened applesauce (or 1/2 cup ripe mashed banana)
2 Tbs honey
3 Tbs nondairy milk
1 Tbs grapeseed oil

Stir until well mixed.  Take 1 1/2 Tbs mounds of batter and transfer to baking sheet.  Bake for 16-18 minutes, let  cool on pan and then transfer to cooling rack.  Enjoy!

Great as a healthy snack or to pack in lunches and easy enough for the kids to make!
