Tuesday Training - Week 7 TNFEC Marathon Training

Here's how week 7 shaped up in preparation for the ZOOMA Chicago half marathon in August and the North Face Endurance Challenge Marathon in September:

Monday:  planned - 7 miles; knees a little sore, decided to delay my run
Wednesday:  planned - track workout, instead made up 7 miles from Monday;  I ran the first 4 miles solo, then finished last 3 with the kiddos.  We ran to the park (older 3 ran, Little A on his scoot bike), stopped for a park break and some hill running and then home.
Thursday: track work out with the kiddos;  Kids biked to the the track then played ball while I did my track repeats.

Friday:  almost 6 1/2 mile trail run at the Dunes;  Kovas planned out our run - loops 10 and 8 not knowing that it included their "3 Dune Challenge," but we decided to do it anyways.  We started out through the woods then looped back on the beach and then up and through the dunes.  This was super hilly and tough - we'll have to bring the kiddos back for the Challenge.

Foodie Friday - Good for You Granola

On a rare occasion, I buy boxed/bagged cereal (usually granola), but most often we just make our own.  Here's a simple granola with lots of nuts and seeds...



In large bowl combine
4 c. oats
1/2 c. pecans
1 c. slivered almonds
1/2 c. cashews
1 c. pumpkin seeds
1 c. walnuts
1tsp coconut palm sugar
cinamon and salt, to taste
1/2 c. coconut oil

Bake at 350 degrees for 20 minutes, stirring after 10.  Let cool and enjoy!

Nut and seed types and amounts can be varied according to taste.

How to Save Money When Buying Organics

We try to eat organic as much as possible, and we're always looking for ways to save on the grocery bill.  Surprisingly we've found that we can actually save money by shopping at Whole Foods - key is to stay in the bulk section.

Here are some price comparisons (WF vs Jewel or Trader Joe's) on items we buy:

Organic bulk oats - $1.69/lb vs $6.99/lb
Organic bulk spices - prices vary, but saving are significant!
Organic raw sunflower seeds for sunflower butter - $3.69/lb vs $9.99/lb.  This one takes a little work - here's my organic sunflower seed butter recipe.

Trick is to stay in the bulk aisle. :)

Week 6 TNFEC Marathon Training



Here's how week 6 of marathon training went...
Tuesday:  7 miles - muggy and threatened rain;
Wednesday:  bonus 5k run in the city with ZOOMA and Athleta;
Friday: 5 miles in cool beautiful weather;
Sunday:  first double digit run since last summer - 10 miles!!

Total miles: 25

With the kiddos out of school, it's a little tricky to fit in all the runs, but the older kids will just have to bike or run along -- so more family time! :)

Three Things Thursday

Super excited - today is the first day of my kiddos' summer vacation!  How are we celebrating?  I let them all sleep in - of course all but one woke up early:)  Next up - clean up and then possibly a movie and ice-cream in town.  

Yesterday we had a great time at the ZOOMA sponsored 5k fun run at Athleta Southport. This run was a suggested donation run benefiting  Girls in the Game, a wonderful local charity which provides sports, health and leadership programs for under-served, minority girls ages 7-18.

Foodie Friday - Sunflower Seed Butter

Our family goes through a ton of sunflower seed butter, so we decided to make our own.  Turned out great - plus more economical than store bought!

The key to making sunflower seed butter is to be patient and keep processing.  There's no need to add oil or water, just keep processing.  The seeds eventually release their oil, and you end up with a creamy spreadable consistency.

Start off by roasting 2 cups raw sunflower seeds at 350 degrees for 20 minutes, stirring often.

Allow to cool a bit, then transfer to food processor.

Process for 5 minutes

Patience...process another 5 minutes stopping occasionally to scrape sides of bowl and to break up mass under blade.

More patience...process until smooth...

Finally something that resembles a nut butter

Patience pays off!  Lastly add 1/4 tsp salt, blend some more and enjoy!

I would recommend to make this seed butter in larger quantities -- it takes a while to make and gets eaten up very quickly! :)  Next up we'll try some of our favorite types of nuts!

Tuesday Training - Week 4 Marathon Training

Here's how last week shaped up in preparation for the ZOOMA Chicago half marathon in August and the North Face Endurance Challenge Marathon in September:
Tuesday:  7 miles
Weds: 2 miles (was planning to run an additional 3 in the evening, but didn't)
Thursday:  3 miles (make-up from Weds) with stroller and stop at the park for Little A to play
Friday: 4 miles as planned with stroller and a stop at the park for Little A
Sunday: 7 miles

23 miles total!  As always I'm being flexible with my training.  It has been working out well - sticking to the weekly miles (I feel like if I skip one run, I'm more likely to skip more) and running with the stroller with a stop at the park for Little A to play -- flexiblity and family time!
